Steak and eggs
The carnivore "one big meal a day" pattern, eaten in the morning. A small ribeye and three eggs cooked in the rendered fat. Works as breakfast, lunch or dinner.

Ingredients
- 011 small ribeye or sirloin, 200-250 g
- 023 large eggs
- 03Salt, generously
Method
Pat the steak dry and salt both sides heavily. Let it sit on the bench for 10 minutes to come up in temperature.
Heat a heavy pan over high heat for 2 minutes. Add the steak. Cook for 2.5 minutes on the first side without moving.
Flip the steak. Cook 2 more minutes for medium-rare on a 200 g steak. Transfer to a plate to rest.
Reduce the heat to medium. The pan should still have rendered beef fat in it — enough to fry the eggs in. If it looks dry, add a small spoon of saved fat from the previous cook.
Crack the eggs into the pan. Salt them immediately. Cook for 90 seconds for runny yolks, longer if you prefer set.
Slice the rested steak into 1 cm strips. Plate with the eggs alongside, runny yolks broken over the steak.
