Dr Ben Bikman
Benjamin Bikman is Professor of Cell Biology and Physiology at Brigham Young University and one of the most prolific academic researchers in the low-carb space. He holds a PhD in bioenergetics from East Carolina University (2008) and runs the Bikman Lab at BYU, with more than seventy peer-reviewed publications on insulin, brown adipose tissue and the metabolic effects of macronutrient choice. He is the founder of Insulin IQ, an education and coaching platform.
His 2020 book "Why We Get Sick" makes the case that insulin resistance underlies most modern chronic disease — the strongest scientific scaffolding for animal-based and carnivore eating. His 2024 follow-up "How Not to Get Sick", co-authored with Diana Keuilian, translates the research into a low-carb cookbook and practical guide. Bikman is not personally a strict carnivore but cites it as a legitimate clinical approach in the right context.
